Curry Prawns w/ Naan and hummus

A good recipe that I make often. Beware of too much curry paste  if you don’t like spicy.

Curry

Ingredients

1 can Coconut Milk
1 teaspoon red curry paste
1 can bamboo shoots
.5 kg FRESH prawns
1 red pepper (chopped)
1/2 large purple(red) onion (chopped)
some fresh basil (chopped)

Step 1: fry up prawns until they just start to turn pink and then set aside.

Step 2: In a medium pot add coconut milk and curry paste and bring it too a boil.

Step 3: Add peppers, basil, onion and bamboo shoots and turn pot to medium.

Step 4: as sauce begins to thicken, add prawns

Step 5: when thick turn down to simmer and cover.

Hummus

Ingredients

1 bigger sized can chickpeas
1/4 cup tahini
2 cloves of garlic
a bit of FRESH lemon juice
a bit of GOOD olive oil

Step 1: throw chickpeas, garlic and tahini in a bowl.

Step 2: keep mashing with a fork until it is smooth. (or use a blender if you have it, I do not)

Step 3: add lemon juice until you like it.

Step 4: sprinkle with olive oil (just a bit)

Naan

I suck at making Naan so I got some fresh stuff from my local Indian market.
